Delicious cauliflower and strawberry smoothie

A tasty treat for when you're on the go or in the mood for something sweet!


I love making smoothies when I want to use up some veggies in my fridge and I'm not sure what to cook. While you often see leafy greens like kale and spinach in healthy smoothie recipes, cauliflower is a great option as well since it doesn't have a super strong taste and is usually unnoticeable when mixed with fruit.


If I'm making this for myself, I'll often add a scoop of vanilla protein power or collagen peptides powder for the extra protein boost. Otherwise, if I'm sharing with my baby daughter, I'll leave it out. Both ways taste great! And like most smoothie recipes, this is super versatile so you can adjust the ingredients easily to make it dairy-free, control the sugar content and can boost nutrition with additional flax seeds, chia seeds, or other healthy add-ins. The choice is yours!


Cauliflower and strawberry smoothie


Makes 1 large serving


Ingredients

  • 1 cup cauliflower cut into florets (I use raw cauliflower but cooked, cooled cauliflower would probably work great as well)

  • 1 1/2 cups frozen strawberries

  • 1 banana (the more ripe, the sweeter your smoothie will be)

  • 1 cup milk or nut milk (I typically use macadamia or almond milk)

  • 1 tbsp flax seed meal

  • 1 tbsp chia seeds

  • 1 scoop vanilla collagen peptides or protein powder (optional)

  • sweetener to taste or additional banana (optional)

Directions

  1. Place all ingredients into the blender and blend until smooth

  2. Taste the smoothie to see if it is sweet enough for your liking and add any additional sweetener or banana and blend again

  3. Pour into a large glass and enjoy!
